Tex-Mex Cornbread
1 egg beaten
1 cup self-rising corn meal mix
1 (8 1/2 oz) can cream-style corn
1/2 cup milk
2 tablespoons oil or melted shortening
4 oz (1 cup) shredded sharp cheddar cheese
2 tablespoons chopped jalapeno peppers or chopped green chiles
Heat oven to 450 degrees. Grease an 8-inch square baking pan. In large bowl, combine all ingredients; mix well. Pour batter into greased pan. Bake at 450 degrees for 25 to 30 minutes or until golden brown. Cool in pan 10 minutes. Serve warm. Makes 6 to 9 servings.
